African Inspired Peanut Stew (gf/df)

This is one of my all time FAVORITES!!! If you do not have an InstaPot...Just make it in a kettle. It checks all the boxes for sure!!! Gluten and Dairy Free. I sub the peanut butter with almond butter. I also back out most of the cayenne pepper as it turns out way too spicy for me! I like to ladle this over some cauliflower rice for a warm and filling winter dish! ENJOY!!! Let me know how you liked it. Click on the pic for the link!



Stuffed Acorn Squash (gf/df)

This is another one of my go-to comfort foods for a chilly night. I sub vegan sausage or vegan meat (Dr. Prager's) in recipe and I use vegan parmesan for the top. It is SO delicious! Let me know how you like it!!!

Stuffed Sweet Potatoes (gf/df)

These Sweet Potatoes are an entire meal by themselves! Play with the recipe...I do not eat corn...So I can add edamame. That is also a good exchange if you do not eat beans. So many options! This website is a great resource for plant based meals! Enjoy and let me know what you thought!
